Hemp Chia Protein Balls

Need a little afternoon boost? Or how about a post-workout recharge? Don't reach for those processed snacks or bars...the Hemp Chia Protein Balls will satisfy you with some much needed protein and a little bit of sweet.  But don't worry, there's no processed sugars or fats and they're gluten free, vegan and made from just simple, whole ingredients!

Hemp Chia Protein Balls

Hemp Chia Protein Balls

Ingredients:

  • 12 Pitted Dates
  • 3 tbsp unsalted Sunflower Seeds
  • 3 tbsp Walnuts
  • 2 tbsp Chia Seeds
  • 2 tbsp Hemp Hearts
  • 1 tbsp Unsweetened Coconut
  • 2 tsp Cinnamon

Instructions: 

  1. Place your sunflower seeds, walnuts, chia, hemp and coconut into your food processor or high-speed blender and blend until they are ground into a coarse powder.  
  2. Then add your dates and cinnamon and blend again until all ingredients form into a thick dough.  
  3. Next roll your dough into 8-10 balls.  Place in an airtight container and keep in the fridge until you need them.

These Hemp Chia Protein Balls can be made in just a couple minutes and make for a delicious grab and go snack.  Each ball contains approximately 3g of protein so enjoy 2 or 3 as a quick energy boost!

The First 3 Days #cleanse #detox

Well, here I am starting day 4 of the 30 Day REAL Food Challenge and I thought you all might like a little up date on how things are going so far.  So here it is:

Day 1:

I went into the first day being pumped about my journey to real food.  I was all prepared for the recipes and everything was coming together beautifully.  The recipes were simple and the food was delicious. Until that afternoon...cue raging caffeine withdrawal headache!  It was like someone had hit me in the forehead with a sledgehammer.  And it was unrelenting.  By the time hubby got home I was walking around like a zombie.  Tired, cranky and in pain.  So that's detox for ya!  And my hubby was no better.  He had the headache and went on this rant about what was this crazy diet thing and it's not enough food for him and his job and blah, blah, blah.  Needless to say we were both in bed by 9:30pm that night.

Day 2: 

When I woke up I felt somewhat better.  That caffeine headache was still there, but not quite as severe.  Again, all the food was amazing and I was sharing my lunch with my co-workers; singing the praises of these clean eating recipes.  By Tuesday night the headache finally disappeared and I shocked that I couldn't actually eat all the food that I was making.  Who knew just veggies could be so filling?!

Day 3:

So Wednesday I woke up and actually felt good.  What the heck?  I wasn't dragging my butt and even at 5:30am I felt perky and alive!  And that was without any coffee!  After we got home from work my husband even admitted that he was feeling pretty good.  And that his anti-food-cleanse rant from Monday was merely induced by caffeine withdrawal and those fun detox side effects.  He even commented at dinner that I was glowing! Yup, GLOWING!  And I was...a bit.  Winter here in Canada can be rough and I'm usually left with a pasty white complexion or what I like to call the fluorescent light tan.  But when I looked in the mirror I didn't look off-white and sickly.  The rosy glow had returned to my cheeks (I  didn't even have to run on the treadmill or shovel the driveway to get it) and my complexion looked fantastic!  I couldn't believe it. Me and my hubs looked more alive than we had in months.   And to top it off, each of us lost 3 lbs!  Not to shabby for the first few days.

Now that most of those nasty feelings of detoxification have left I'm super excited to see what the next week brings.  We get a whole new plan of recipes and I can't wait to see how all these amazing foods change our bodies and minds!

Festive Gluten-free & Vegan Cookies

Well, it's that time of year...time for baking and icing and filling your face (and your family & friends faces) with all matter of cookie goodness!  But now that I'm staying away from dairy and eggs, I've had to adjust my baking repertoire accordingly.  So I've rounded up a few super yummy gluten-free and vegan Christmas cookies that you can add to your recipe box. Vegan Apple Pie Lactation Muffins #glutenfree

It's a cold and blustery day here on the homestead and after my daughter requested muffins for an after school snack, I thought what better way to warm up than to whip up a batch of yummy muffins.

Now being home with a toddler means I don't have a ton of time to cook a complicated recipe.  So I came up with this super quick & easy gluten-free, vegan muffin recipe that the whole family will enjoy.  And with the added oatmeal and flax it's perfect for nursing moms and just sweet enough for a guilt-free indulgence!

Vegan Apple Pie Lactation Muffins

Vegan Apple Pie Lactation Muffins

Ingredients:

  • 1 1/2 cups Gluten-free All-Purpose Flour
  • 1/2 cup Oats
  • 1/4 cup Ground Flax
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Pumpkin Pie Spice
  • 1/2 cup Raisins
  • 1/4 cup Coconut Oil (melted)
  • 1/3 cup Pure Maple Syrup
  • 1 1/4 cup Unsweetened Applesauce
  • 1 tsp Vanilla

Instructions:

Preheat your oven to 375 degrees.  Grease your muffin tin or use liners.  In a medium bowl combine all your dry ingredients and raisins.  In a separate bowl mix all your wet ingredients until combined.  Then add your wet ingredients to your dry and mix just until incorporated.  Then bake for 15 minutes.

Makes 12 muffins.

Lactaction Muffins Vegan

These Apple Pie Muffins are a cinch to make and in less than half an hour you can be enjoying these moist and satisfying muffins.  They taste just like Apple Pie or Apple Crumble and no one would ever guess they're gluten-free, refined sugar-free & vegan!

2 Minute Vegan Guacamole

I LOVE Avocados!  But I always have problems achieving that perfect ripeness.  I either buy them too ripe and they go bad before I get to use them or I buy them so unripe that I totally forget I have them by the time they are good to eat.

And today was no different in my avocado timing.  I really wanted to eat those lovely green goodies, but when I cut into them they were too ripe...again. But luckily they only had a couple bad spots that I could cut off.  So when life gives you lemons....or overripe Avocados...make GUAC! So here it is, possibly the easiest & quickest Guacamole recipe and the perfect way to use up a nearly spoiled Avocado or two.

2 Minute Guacamole

Ingredients:

  • 1 (or 2) uber ripe Avocados ( by the time I cut off the bad spots I had about 1.5 Avocados)

  • Couple Sprigs of Fresh Cilantro

  • 1 thin slice of Onion (or more if desired)

  • 1-2 tbsp Lemon Juice

  • Salt & Pepper to taste

Instructions:

Peel your Avocado and place in a bowl.  Add your cilantro and chopped onion, lemon juice and salt and pepper.  Grab your immersion blender (or throw all ingredients into a blender) and pulse a few times until smooth.  And that's it! Fresh delicious Guacamole.  You can add some chili flakes for a little kick or some diced tomato.  But even on it's own it's super yummy!

Skip the pricey grocery store Guac and whip some up in just minutes.  It's perfect with crackers or tortillas, a dip for veggies, on a wrap or salad or on your baked potato!  It's just that simple.

Chocolate Monkey Overnight Protein Oats #Glutenfree #Vegan

So I've recently become addicted to Overnight Oats and I just can't seem to get enough of this yummy, nutrient packed breakfast.  Never had them? Oh, man...you MUST try them.  I love that they are super easy to prepare ahead of time and are great for a quick meal on the go.  And you can make a million variations with simple ingredients from your house.

I'm going to share my current favourite flavour....Chocolate Monkey!  Yup, chocolate for breakfast and it's healthy for you too.  Score!

Chocolate Monkey Overnight Oats

Chocolate Monkey Overnight Protein Oats

Ingredients:

  • 1 cup Gluten-free Oats
  • 1 cup Vegan Milk (I like unsweetened Vanilla Almond-Coconut or Hemp Milk )
  • 2 tbsp Cocoa Powder
  • 1 very ripe Banana
  • 2 tbsp Unsweetened Peanut Butter (optional)
  • 1 tbsp Hemp Hearts (optional)
  • 1 tbsp Ground Flax Seed (optional)
  • 1/4 cup Vegan Protein Powder (Vanilla or Chocolate works best)
  • 1 tbsp of your favourite Sweetener (this is optional, but I like Brown Rice Syrup or Maple Syrup the best)

Instructions:

So it can't get much easier than this.  In a medium sized bowl mash your Banana with a fork.  Add in the rest of your ingredients EXCEPT the oats and whisk well.  Then stir in your milk.   If you are using Flax you may need to add a bit more liquid as the Flax will absorb a fair bit.  Pour your mixture into to small containers with tight fitting lids; small mason jars are perfect for this! Then place in your fridge overnight.  

In the morning you will have a lovely protein packed breakfast that will keep you going all morning.  Plus, if your breakfast is always rushed, this is a convenient way to grab something to eat on the go.  Oh yeah, I almost forgot...these Chocolate Monkey Overnight Protein Oats totally taste like dessert!  Once you try these, you'll never skip breakfast again!

Strawberry-Vanilla Chia Pudding

Too busy to cook breakfast in the morning? Try this super easy and nutrient dense Strawberry-Vanilla Chia Pudding.  Not only is is yummy, but it will keep you going all morning. And it's just another wonderful way to eat those fresh, local strawberries...mmm!

Strawberry-Vanilla Chia Pudding

Ingredients:

  • 2 tablespoons Chia Seeds
  • 1/2-1 cup of your favourite milk (I use Almond Coconut Milk)
  • 1/4 - 1/2 cup of sliced Strawberries (any other berry will work too)
  • Ground Vanilla Bean Powder
  • Nuts (optional) - I added some walnuts and pumpkin seeds for a little crunch

Instructions:

This Chia Pudding couldn't be any easier to make.  Mix your Chia, milk and a sprinkle of vanilla powder (I used about 1/4 teaspoon) together in a bowl and let sit.  I usually mix this first thing when I wake up and then go about my other morning tasks.  Let it sit for 15-20 minutes, stirring occasionally.  Once your Chia and milk have gelled to your liking, top with berries and nuts and another sprinkle of ground vanilla.  And voila! Breakfast!

Quick Protein-Packed Super-Food Breakfast Shake

I have a confession to make....I've gotten lazy and I have put my eating habits on the back burner.  Between moving and working, sick kids and various other stresses and emergencies this past month, I can honestly say I have fallen off the wagon, or at least my wagon.  But now that I'm on the verge of catching this nasty bug that's been hanging around my house, I've decided I need to get back into the groove of staying healthy by eating healthy.  With most of my kitchen stuff packed and crazy mornings before school, I haven't been eating the best breakfasts and I've even skipped a few.  So that's what I'm starting with today.  An easy quick breakfast I can have on the go when I don't have time to make a proper one.  Luckily, working in a Naturopath's office has some great benefits, one of which is being exposed to some pretty amazing products.  I found 2 powders in the shop that I thought would work perfectly for me in the morning.

First is Greens First Berry; a nutrient rich super food powder.

 And then comes the ND Shake for Women; a professionally formulated women’s multivitamin with a blend of 18g plant protein, greens, super fruits and fibre, plus nutrients specific to women’s health such as cinnamon for blood sugar balance, calcium for bone health and cranberry for a healthy urinary tract.

So here's what I came up with:

Quick Protein-Packed Super-Food Breakfast Shake

  • 1 level scoop of Greens First Berry
  • 2 rounded scoops of ND Shake for Women
  • 1.5 cups filtered water
  • 1/2 cup Almond-Coconut Milk

Place all ingredients in your shaker cup and get mixing.  I don't have one so I mixed everything in a Mason Jar.

I was truly impressed with how it turned out.  It was smooth and sweet with a lovely fruity taste.  Not even a trace of green or swampy flavour from the greens.  My shake tasted surprisingly familiar...almost like Strawberry Fig Newtons.  Mmmmm!

The best part is it's vegan, gluten-free and totally filling.  I had my shake about 7:45am this morning and it kept me going all morning and now at 12:30pm, I'm not yet hungry.
